Description: a great complement to your chip dipping regimen or as a sauce on your favorite Latin cuisine, this dipping sauce packs protein-rich chorizo (spicy pork sausage), fresh vegetables and spices, cheese and beer to perfectly enhance or act as a meal of its own.
Notes: Queso can be difficult to reheat in the microwave. This sauce can be refrigerated, but take extra care when storing and reheating. Use “reheat” settings if using a microwave, or use low heat on a stove. Stir frequently whichever way you choose to go.
Chorizo Chipotle Queso Dip
Ingredients:
1 lb chorizo ¼ cup red onion, chopped3 canned chipotle peppers with 2 tablespoons of the sauce¾ cup beer2 cups white cheddar shreds2 cups monterey jack shreds1 tablespoon flour¼ cup cilantro, chopped

Preparation Instructions:
In a large pot cook the chorizo, red onion, chipotle peppers w/ sauce and half of the cilantro until chorizo is done
Stir in the flour and cook until the mixture thickens
Add in the beer and the cheeses and stir until smooth and the cheese is completely melted
Garnish with remaining cilantro, serve with chips, and enjoy!
